Mennonite Central Committee (MCC), in conjunction with local meat canning committees, process and can meat to be used in North America as well as world-wide. A mobile canning unit is mounted on a flatbad trailer and travels to thirty-three locations in eleven states as well as Manitoba and Ontario, Canada, from October to May. It is set up in Kidron in October for three days of turkey processing. Up to nine thousand pounds of boneless turkey thigh meat can be processed in a day. One can provides a protein meat dish meal for six people, but when mixed with rice or beans, a can will provide a meal for thirty-six people. The unit cost to manufacture and ship one can is about $3.40.
